Kimchee Jigae

In the cold grip of winter 2011, work took me on a quick trip to Salt Lake City, where I took advantage of the opportunity to spend time with my cousin, C. Over some great wine and chocolate we chatted about many things, including getting in touch with our Korean roots through food. Korean cuisine is some of the most flavorful food on the planet, if you ask me! C. told me about her forays in Korean cooking and had a worn, splattered Korean cookbook to prove it.

She inspired me, and upon returning home I set out to follow in her footsteps. Kimchee jigae is one of my favorite dishes. It’s colorful, steamy, dizzyingly hot and, it turns out, easy to make.
